Vacuum frying machine is a chips fryer machine with vacuum frying technology.

As the frying process is carried out under pressures well below atmospheric levels, preferably below 6.65 KPa, the boiling points both of the oil and the moisture in the foods are reduced.
Due to the lower temperatures applied, the formation of suspected carcinogen acrylamide is significantly lower than in standard atmospheric fryers, where the frying temperature is approx. 170 °C (338 °F).
It is easier to maintain natural colors and flavors of the finished fried snacks.
